I'm a dedicated (amateur) home baker who bakes several times a week, and there are two final frontiers still unknown to me: yeast breads and fancy layer cakes. Unlike simple Bundt cakes or single-layer cakes, layer cakes are composed of two (usually three) or more layers of carefully arranged cakes glued together with some sort of icing (fudge, chocolate, buttercream, etc.). If you're trying to assemble and frost a layer cake on a stationary cake stand, it's much harder to achieve a smooth finish when frosting the outside as you have to keep manually turning the stand, which can cause the cake to wobble and become crooked as you're trying to ice it.
I decided to take the plunge and invest in an Ateco revolving cake stand. It has a very solid cast iron base with a lovely vintage white finish and a 1/8" aluminum top. It also comes with a nonstick pad that can either be used under the stand to keep it anchored to the countertop, or on top of the stand to stabilize your layer cake.
There are several different companies (Magic Line, Wilton, Ateco) that manufacture similar cast iron revolving cake stands, but I chose Ateco based on prior brand purchases (cake decorating equipment) and the fact that the stand is constructed in the USA (other than Nordicware, Libbey and Anchor, it's increasingly difficult to find items made in-country!). It came highly recommended by America's Test Kitchen as well. The packaging was very secure and I received my stand without any scratches or dents.
This is a hefty stand, both in weight and cost, that will stand up to a lifetime of use and is well worth the investment if you're a professional baker, pastry chef, or a home cook who makes a lot of layer cakes. If you're just a casual layer cake baker, consider Ateco's US-made plastic revolving stand for 2/3 less. But this is the rare piece of kitchen equipment that is not only useful, but aesthetically pleasing as well; I leave mine displayed on my baker's rack when not in use.

I've used Wilton fondant three times now, and each time it was incredibly easy to use. It takes color well, it rolls easily and it's a champ as far as holding up and not cracking or drying too quickly. So why does it get such poor reviews? TASTE! Absolutely horrible taste. When I used Wilton (the first fondant I ever tried) I thought hey, maybe I just hate fondant. I then tried Satin Ice a few weeks ago, and the difference was incredible. Satin Ice, however, is only sold at a few locations, mostly east-coast, so despite its low cost you'll pay just about as much for the fondant as you will in shipping charges. I recently discovered an alternative that takes blends the ease of use of the Wilton fondant with the taste of the Satin Ice - I made my own! It's an incredibly easy recipe with only three ingredients - marshmallows, water and confectioner's sugar. You can also add in orange or vanilla extract for added flavor. Making your own fondant is cheap, easy and it tastes very good. Recipe is easily found online (I didn't create it so I don't want to post it here). I recommend skipping the Wilton fondant and making your own!

Although this is rated high up there with the many top wedding advice books, this still isn't one of the best. My main and only problem of the book is where is the "budget" aspect of the book as it says in the title. They offer numerous and helpful tips and advice about planning a wedding, even an elegant wedding. But for those actually looking for advice on keeping a wedding under a limited budget, this isn't the book. For real and practical budget advice, I recomend Bridal Bargains by D. Fields.

Save yourself the money and take this book out from the library. I only liked 2 or 3 of the ideas and to me that's not worth $15. About half of the book contains jewelry making instructions. I also wouldn't call it "projects to personalize your wedding" I would call it "projects on a budget." If you are looking for ways to save money by making standard wedding necessities on your own then I recommend this book to you. But if you are looking for unique ideas for personalizing your wedding this is not the book for you.

This book was a little to girly for my husband and I. He gagged at most of the idea's presented in the book. I did think the book had a few interesting basic ideas, that with some creative thought and know - how could become more suitable decorations. I don't think many people would create exact replicas of the decorations in the book because most of them are a little out-dated and almost any groom would turn their nose up at them. I think just flipping through it in a book store is enough, in fact I never used my copy of the book. If your looking to make your own wedding decorations I suggest buying an actual craft leaflets (like The Complete Wedding Floral Book, by Leisure Arts) which you can get at your local craft store. These leaflets were what I used for my own wedding, and they where ten times more helpful than any wedding decoration book I have come across.

I usually don't write reviews on products. Wilton didn't put a lot of information on the packaging for this product so I thought that I would give you a run down on my experience. Here are the keys things to do when making brownie pops:
1. Make the brownie mix (I used Pillsbury). A box mix makes about 24 pops. I bought 2 pop pans to save time.
2. Spray the pan with cooking spray.
3. If you have a cookie scoop put one scoop in each "pop" otherwise fill 2/3 full.
4. Bake for about 30 min on a level baking sheet. Make sure it is not a baking sheet that warps in the oven.
5. When the pops come out of the oven some of the tops may not be flat. Take a spoon and push all of the tops so they are flat.
6. When you take them out of the oven let them completely cool. If you try to take them out early they will break apart. I put mine in the refrigerator for about 30 minutes to make it faster.
7. Remove them from the pan very carefully. Place them round side up. I was making pumpkin shaped pops so I wanted the stick on the rounded side. You can also add the stick on the flat side part way through baking. If you do this skip #8 & #9.
8. Take a Lollipop stick and make a hole in each pop.
9. Melt some chocolate chips. Put the melted chocolate in a icing tube and pipe the chocolate into each hole. Place a lollipop stick into each hole right away. Let them set. I put them into the refrigerator again for about 15 min or so.
10. For the icing I made a powder sugar icing. Which is sifted powder sugar, a little water and vanilla. You can also use a petits fours icing. Make sure the icing is not too thin otherwise you will be able to see brown through the icing. You will have to play with the icing consistency.
Hope this helps! Overall I thought the brownie pops where fun to make and you can tailor them to any occasion.

I've taken to making cupcakes and cookies and making icing letters on them... you know, an "H" on one cookie, "A" on another, and so forth, and arrange the cookies or cupcakes to spell out HAPPY BIRTHDAY or whatever the occasion might be. I prefer bold, rich colors, like jewel tone colors, so these gel colors fit the bill to get the bold color without watering down my icing. Only takes a few toothpicks of color to get what I'm looking for, so each 1/2 ounce color is going to go a long way. A good buy, all around. I will never go back to regular liquid food coloring!
Also, I know others have stated this but I'll say it again, the black color is good but you have to start with a chocolate icing, not a white icing.
**Update** I found another use for these Wilton colors by making colored sugar. I've used it with granulated sugar and with sparkling sugar (bigger crystals) and it works great either way, but the sparkling sugar is more, well, "sparkly" which I like since I use the colored sugar to decorate cakes and cookies with. Put the sugar into a Ziploc bag, take the tip of a butter knife to get some color on it, then wipe the color off the knife on the inside of the bag. (Does that make sense?) Zip up the bag, then mash the sugar around with the color until evenly distributed. The color will come off the side of the plastic bag just fine and blend in with the sugar. Then spread the sugar out on a plate or a sheet of foil to dry for a few hours. Voila!
