(More customer reviews)I made two multi-layer cakes for two different dinner parties this week and received many compliments on the beauty of the cakes, especially the evenness of the layers. I explained to all that it was the result of this magnificent layer cake cutter with serrated wire. I decided today to send out a link to others to purchase it and Amazon seemed to be the best. I just read the reviews, however, and I am mystified at the range of responses. This cutter is absolutely perfect for me, so I can only conclude that those who have written poor reviews may not have used it as effectively as I have.
I will share with you my technique which works every time. Very simply, you must place your cake on a large flat surface to give you enough room to work the 15" cutter and use a gentle, slow sawing motion (back and forth)to cut the cake. Depending on the cake, it may take a moment or two to cut through the outer crust. Be patient. Once you cut through continue sawing gently through the cake. I have cut layers as thin as 1/4" - the easiest Dobos torte I have ever made! I have used this cutter to slice butter cakes, genoise cakes and tortes made with either bread crumbs or finely ground nuts, such as walnut, almond and hazelnut. I have not used it on chiffon cakes, flourless cakes nor bundt cakes, so I offer no opinion there.
If this wonderful cutter is not working for you it is probably not the cutter but rather ineffective technique in its use: 1)not using a gentle, slow sawing motion; 2) pushing the wire through the cake rather than sawing; 3) rushing the cutting; or 4) not having a wide flat surface upon which to work.

Wilton 2109-859 50-Piece Tool and Caddy Decorating Set Review

(More customer reviews)I love to bake. In fact, I baked my own wedding cake. Last weekend, I baked a wedding cake for a friend getting married in Boston, which was no small feat because I live in Virginia! I baked the cake in VA and drove it up, and iced it once I got there. I had to do all the smooth coat and all the detail work right at the reception hall, with people watching. I used all my wilton bags and tips to do the job, but had nothing 'nice' to carry them all in (which would have looked very professional in front of an eagerly awaiting reception hall). After seeing one of these decorator's toolboxes, I rushed to Amazon to add it to my wishlist.
2 reasons it didn't score a 5: First of all, the nice plastic molds for storing the tips do not accept any larger Wilton decorating tips like #789, or any of the longer ones such as #1L. Second of all, the lids to the toolboxes are annoying shades of pastel plastic... It looks like you are carrying around a makeup kit for Malibou Barbie.
Other than that, this is a must-have if you need to travel and decorate.

Wilton Mini Ball Pan Review

(More customer reviews)I've used this pan to make cakes decorated like Christmas ornaments, igloos, small sports balls, and the center of a large sunflower cake. It's hard to carve a shapely circle from round/square cakes, so this has been an indispensable tool in the aforementioned projects.
This is made of flimsy aluminum and requires generous greasing to avoid sticking - leave no spot ungreased! I use homemade cake release and it works better than spray (thoroughly mix 1 cup flour, 1 cup shortening, and 1 cup veggie oil - brush on pan with pastry brush and refrigerate remainder for future use). I also had to adjust my baking time/temperature to avoid any burned cakes.
All in all, I'm glad that I have 2 sets of mini ball pans for the occasional spherical cake. With Amazon's 4-for-3 promo, this ended up being a good deal for me. Just remember that greasing this sucker is essential.

Wilton 307-859 3-Tier Cakes N More Party Stand Review

(More customer reviews)I bought this 3 tier cake stand to present a wedding cake that had separate small, medium, and large layers to be set on the 3 platforms. The stand was affordable and looked presentable in the picture, and hence I picked it. It came with clear assembly instructions, was easy to assemble, and was very sturdy once assembled (although see below). Note that the 3 plates on the stand are clear molded plastic, not glass or thick plexiglass. Also, it's a bit hard to see from the product photo so I'll note that the 3 plates don't overlap each other above and below - they're fully offset so you can put things on them that are taller than the height between them. Overall the stand did turn out to be clean looking and presentable. For the formality of the wedding reception we draped it with white linen napkins, but I would definitely use it undraped at home for desserts or appetizers at a less formal party. My only complaint is that one of legs was missing the notch needed to stop it from slipping through the slot in the base (the bottom large silver circle you see in the product photo) that holds all 3 stands together to form a stable platform. I didn't have time to deal with it before our event so we jury-rigged it with tape and it worked great; I've since called Wilton's customer service, which was friendly and helpful, and they're sending a replacement leg now, no questions asked. So if you're looking for a nice-looking, sturdy, inexpensive way to present desserts or other things I definitely recommend this product.

Wilton Pure White Rolled Fondant, 1-Pound 8-Ounce Review

(More customer reviews)I've used Wilton fondant three times now, and each time it was incredibly easy to use. It takes color well, it rolls easily and it's a champ as far as holding up and not cracking or drying too quickly. So why does it get such poor reviews? TASTE! Absolutely horrible taste. When I used Wilton (the first fondant I ever tried) I thought hey, maybe I just hate fondant. I then tried Satin Ice a few weeks ago, and the difference was incredible. Satin Ice, however, is only sold at a few locations, mostly east-coast, so despite its low cost you'll pay just about as much for the fondant as you will in shipping charges. I recently discovered an alternative that takes blends the ease of use of the Wilton fondant with the taste of the Satin Ice - I made my own! It's an incredibly easy recipe with only three ingredients - marshmallows, water and confectioner's sugar. You can also add in orange or vanilla extract for added flavor. Making your own fondant is cheap, easy and it tastes very good. Recipe is easily found online (I didn't create it so I don't want to post it here). I recommend skipping the Wilton fondant and making your own!

It does work, it's certainly sturdy enough, but you need to get apples that are a bit on the small side, unfortunately. works GREAT for satsumas, and will probably work nicely for plums in the summer. I would have liked this to be a little larger, but it does work.
